  • Cornish Yarg now made by Catherine Mead and Dane Hopkins, is based on a recipe for nettle-wrapped semi-hard cheese, which was found by Alan and Jenny. Gray, in their attic. Yarg is named after the original makers, and is Gray spelled backwards.   Cornish Yarg is known as a ‘territorial’ cheese, it has a wonderful texture and taste, and the recepie is thought to date b ack to the 13th   The milk is from neighbouring farms near Truro, and the nettles are pressed then painted onto the cheese.     The nettles affect the acidity of the cheese, resulting in a softer taste.
  • Cow, unpasteurised, traditional rennet.
