- Caerphilly, made by. Todd Trethowen. at Gorwydd Dairy is a mixture of British Holstein and Jersey yielding rich. milk which. makes this beautiful Caerphilly, which has a silvery velvet edible rind, with a layer of mushroom edge and in the centre a lactic lemony taste with a more crumbly texture.
